Simple as you stated: was 'Hey', you have just recognized it. On the other hand, if you want that your application will recognize it, eh, well, sorry..., I don't think we two will be ever able to make such an application :):-D:)

The key word here is OCR (optical character recognition). Try searching for it and you should come up with some ideas on how to start...
