Whenever I order salmon nowadays they ask how I want it ( as in medium, rare, etc ). What the hell is that ? I want it cooked. Not all the way through to rubber, which is what some people want now apparently.

Can't agree more. But if you don't cook it all the way through I can't imagine what the risk is, tapeworm does not live in fish?

One thing I was sorry to discover is that neigher tuna steak nor swordfish steak is anywhere near as popular down here as it was up no'th. On the other hand, I can treat yawl to a mess of chitlins and lima beans next time you're in the neighborhood. Or maybe some pork trotters 'n deep fried brains?

As a general rule, (freshwater) fish carry more parasites than any other source of meat, and most are perfectly happy to feast on long pig. Most are more dangerous than tapeworm. Saltwater fish like tuna are safer as a rule, but care is still advised. Salmon is particularly dangerous to eat raw. [^]

The salmon I eat is farm raised, so OK according to this. Either way, I don't think it's any specific disease, just a general squeamishness at work.

Ick, although it wouldn't bother me too much being tuna. What bothers me is the cow-variety of steak being cooked anything above medium rare, it's just a waste of good meat. Personally I like rare.

Depends on the country. According to reports a couple of years ago, they raise fish there, in water that might as well be a cesspool from the amount of bacteria and human waste in it.

Swordfish was VERY popular ( at least in the Charleston area), but the sustainable fishery stuff, stuffed it off the menus. Tuna ( to locals) is still popular ( I carry wasabi on my boat) but wasn't a tourist hit like swordfish.

Can't buy the steaks around here and it isn't on the menu at the two local seafood restaurants. I'm in a fairly rural part of the state
