Well I guess because they aren't "negotiating" with foreign governments, they're talking with those people as people. For example, the Dutch prime minister (the last 3 have all participated in Bilderberg Group meetings) is not the Dutch government, he's the head of the Council of Ministers.

Because they'd rather make the money themselves than declaring publicly what they intend on doing? I've seen people have fun while golfing, they had one of the golf bags replaced with a keg on the back of the golf cart, but they were certainly enjoying themselves.

Would answering the questions prove it? If they went on record saying "No, we're not talking about world domination," would people actually believe them? I mean, if the conspiracy theory WAS true (Hypothetically), they would lie about it anyway. So answering the questions does not suffice... What would constitute proof? Bringing a camera in there? I thought the entire point was to get away from the media for a little while... You know... A vacation.
