I've never actually had tomatillas (and I just made garden salsa the other day). What's the bonus about them?

Well, they have flavor. It's a sharp, tangy, slightly bitter flavor, and frankly i find it down-right offensive unless tempered by some serious roasting... but it's a good deal more interesting than any green tomato i've ever tried. Oddly enough, their appearance resembles that of over-grown ground cherries, a fruit i'm familiar with from childhood... But don't really taste anything the same.

I mostly feed them to the chooks. Of course, the red ones are another matter. I am just coming to the end of my supply of oven dried tomatoes, and they have been marvelous.

Ripe red tomatoes! Put them on a windowsill and they will ripen into red tomatoes. I found if I let the tomatoes ripen on the vine the worms would invade them. Short of using chemicals picking them green and ripening them on a windowsill, with a lot of air circulation, foiled the worms and gave us plenty of ripe tomatoes. Some were also fried when green and were good too.

T O M A T O E S ! I seriously love them... Well, the simplest and nicest way to eat t o m a t o e s is: 1. Wash them. 2. Cut them in portions. 3. Place them on a big tray. 4. Put olive oil over them (be generous here). 5. Put some salt over them. 6. Cut some garlic in small cubes (1,5 x 2 x 2 millimeters approx). 7. Put that garlic over the t o m a t o e s. 8. ENJOY! This is simple, economic, healthy, tasty, fast, easy to do, ... and of course it involves T O M A T O E S Hope this helps... EDIT >> Once you've finished eating the t o m a t o e s, please, use bread to dry and eat the oil that is on the bottom on the tray...

There are other ways to can as well as this, this is just the way I like them. And this is for pickling one or two jars at a time of peppers and such. Canning ripe tomatoes or vegetables is completely different. Get the jar you will be using (widemouthed mason jars are the best.) Get one small and one large sauce pan. Put the flat parts of the lids in the small pan upside down, pour in a little vinegar, and put on very low heat. In large pan pour in approximately half the mason jar filled with vinegar, put on medium heat, let heat until it starts to steam. Warning: do not inhale the vinegar steam, it will take your breath away, it will also clear your sinuses, so if it does happen, try to not get snot all over your food, seriously i have seen people collapse from inhaling steam from vinegar, so be careful. Another note: When cutting up hot peppers, wear some gloves, with your hand in and out of water the skin will become soft, and the pepper juice will soak in. Very painful and anywhere you touch on your body will start to burn also, even if you wash you hands. I know of people who rubbed there eyes later in the day and it burned, or worse went to the bathroom, they should have worn gloves to cut up all that pepper, they were warned. Pack you jars with whatever you are pickling. I like to put in a little onion, pepper, and green tomatoes. Some people add sugar and/or spices to the heated vinegar for different tastes. Pickled eggs is very similar, hard boil the eggs (peel), pack in jar with some peppers, some ground Cayenne and follow the same instructions. I do not eat them myself, but my dad loves them. With a coffee cup or something similar, get some of the hot vineager and pour into the jars over the contents till almost full. You may need to heat more vinegar I do it this way to keep from wasting the vinegar. Carefully fish out some of the lids. Use a towel and make sure all the lids are on tight. Lay another towel out on the counter, turn each jar over carefully with the top down on the towel, cover with another towel and wait. When you hear a pop sound the lid has sealed. Wait till they cool then wash the jar off and place on a shelf somewhere till you need them. Hope this makes since, maybe i should have written it like a program flow, it probably would have read better that way anyhow. You can also make refrigerator pickles. Put onion(cut into rings or wedges), pepper, cucumber (peeled cut sliced into wedges), cucumber peals as well, cauliflower, whatever in a

We can peppers (banana pepper, jalapeño, etc), In some we will cut up some green tomatoes in the jar as well. Very unique flavor when pickled and they take on some of the peppers they are pickled withs flavor.

I had to read "We can peppers" three times before I realized you were talking about preserving.   I was trying to figure out what the missing word was ("We can ____ peppers") Duh!

It's a southern thing I guess, probably should have said "We preserve peppers". A lot of people round here just say they "Put up peppers for the year". Had a friend and his family from up north down one year he asked "Where do they put them up?"
