I'm doing my masters part time, and I'm finding that I've mostly forgotten what little probability and statistics I learnt at school and college. While I don't have it as a subject by itself, probability and statistics make their way into most other subjects - subjects as diverse as computer networks and data mining. The authors of books on those subjects directly jump to the results, assuming that the readers know enough math to fill in the details. Do you have any recommendations for good introductory books on probability and statistics that emphasise applications and attempt to explain things intuitively?

For a quick reference I use "Handbook of Probability and Statistics with Tables" by Burrington and May. You can find them used for a few dollars.
