    Candied Bacon Ingredients Thick cut slices of bacon. Ground black pepper 1/3 cup brown sugar 2 baking sheets, preferably the same size Directions Preheat the oven to 325 degrees F. Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Do not overlap the bacon. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks. Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray. Keep in mind that the bacon will harden some when it cools. Be careful not to overcook it.

        I've done the same, but instead of two sheets to sandwich the bacon I used a rack on each sheet to allow the bacon to cook more evenly. The baking is a slower cook compared to frying, so mine didn't curl either. For fun, cut the bacon up and add to a chocolate cake with dark chocolate ganoche frosting! It is amazing how well bacon and dark chocolate go together. Plus, you can say you have had a chocolate and bacon cake! Also, ground nuts mixed in with the sugar give it a southern praline touch or maple syrup instead of brown sugar works in a pinch. The most important part was the last sentence. I lost a batch on my first try, watch this like a hawk sugars go from undercooked to perfectly carmelized to burnt in a very short time.

          Take a gander at some of the stuff on this[^] menu at Chicago's bacon fest, how could I have not heard about this? Dutifully noted for next year though.
