The menu is usually the same every week (but varies in terms of implementation): 1. Pea soup Sautee a small onion, some chopped celery, and some garlic. Add water and peas. I usually add an extra cup of water, and turkey ham (leave out if you're a veggie), plus some herbs. At the end, some butter. 2. Salmon with rice and brussel sprouts We get some excellent salmon here in Rhode Island. I like to bake it with some bay leaves or capers (haven't tried both together), with short grain rice (a kind of brown rice) and brussel sprouts boiled, then salted and buttered. 3. Chili Ground turkey meet, organic beans, and Shelby's chili mix. I start off the same way as pea soup--onion, celery, garlic. 4. Chicken soup Start like with pea soup, then add your favorite veggies like broccoli, peas, snowpeas, sugarsnap peas, carrots, etc, add water and a whole organic fed, no hormone, no antibiotic chicken. After it cooks, remove bones and slice up the meat, add some diced tomatoes or tomato paste to get a "minestrone" flavor. Add some star noodles for variety. The great thing about most of these meals is that there's enough for several lunches and dinners, and they taste better the next day! If you're curious, breakfast most days is organic outmeal with blueberries or bananas, a splash of maple syrup, cinammon and cardamon. Marc Help! Cardamom, sometimes called Grains of Paradise, is a pungent, aromatic herb first used around the eighth century, and is a native of India. I thought it was a spice though, seeing as it's made from the seed of the plant, not the leaf. Maybe the leaf is used too, but I've never had that.
