Lobster is a tradition in my family. Don't know too many others who eat it then. What big celebrations do you have throughout the year?

Have you lighted the X'mas lamps, decorated the tree with gifts and charms, stocked a turkey, checked on the wine stock, got cakes ready and what else? Yep. Tree is up ( a 7 foot pine ) lighted ( 450 little bitty LED's ) and all the presents are wrapped and under it. My wife has put this fake snow crap all over everything and hung the balls and angels. I have some Myers Rum for the rum toddies, some good California red to go with the standing rib roast we will be having on Christmas day. Have several cakes and pies ready to pick up at the bakery (on the 23 ) and some fresh sourdough bread fixings percolating in the kitchen. Have a case of St. pauli Girl and a case of San Miguel in the garage icebox for the football games and all is well. Except that a certain client of ours is in town and wants to meet and discuss a project and the only time he has available is 2:00 PM on Christmas Freaking Eve. :( Richard "The man that hath not music in himself and is not moved with concord of sweet sounds is fit for treasons, stratagems and spoils; Let no man trust him." The pic posted above looks good, but if you try to roast it so thick, will it get cooked well inside? Do you marinate the meet with something before you roast it? Smitha Vijayan wrote: will it get cooked well inside? If it does, it's ruined. Proper cooking results in a reddish center, dark on the outside. Serving it requires some finesse; those who like rare meats get the middle, while those who prefer well done get an 'end cut' taken from either end of the roast where the meat is more deeply cooked. One suggested recipe calls for covering it completely with coarse salt and black pepper, then roasting at high heat for a bit to sear it, then reducing heat to a very low value for several hours. The salt and pepper not only flavor it, but also form a hard crust that keeps the meat from drying out. I've not heard of marinating a rib roast, though. I don't know if you have horseradish there, but I'm sure you have plenty of hot, tasty sauces to experiment with. Here the horseradish is grated very fine, blended with herbs (called 'prepared' horseradish), then folded into whipped cream (the real stuff, not that sugary topping used for desserts) to cut the heat down to a level most humans can survive. Properly done it complements the roast and keeps the sinuses clear for weeks.:-D "Another day done - All targets met; all systems fully operational; all customers satisfied; all staff keen and well motivated; all pigs fed and ready to fly" - Jennie A.

n/p I'm kind of a "Grinch" anyway - not that I dislike Xmas in general, but what is made of is just sick (and this year it comes with extra pain). I'll be off later to my "4 Ladies" (Mom, Sis, Nice, and Mom's dog), and do some Christmas in Family - the little we got.
