The best place to start would be by gathering the functional requirements for the system from your users. Then you will know what you need to develop. I doubt you're going to be able to download the source code a fully functional booking system for free. It is unlikely that companies developing such systems will want to share their intellectual property for no return. That said, the basic tenets of a booking system aren't particularly complicated so once you have the functional requirements then it should be pretty straightforward to develop the system.
