My favorite cheese? Do I have to pick just one? Feta, Brie (sp?), extra-sharp cheddar, real parmesan, gorgonzola. Can't stand any of the fake cheese food products out there. I refuse to eat American cheese. Don't see how anyone can eat it.

I love gorgonzola :) (and I guess that it's impossible to made it using soy). I hope that with "real parmesan" you mean parmigiano reggiano :) (their latest TV spot features a cow who tries to join their farm http://www.topspot.it/spot/spot.asp?id=245). If you want to taste other italian cheese I can suggest pecorino or, even better, "formaggio di fossa"; It's a bit spicy (but if you like gorgonzola this should not be a problem :)) but it's great with a bit of honey. Can't stand any of the fake cheese food products out there. I refuse to eat American cheese. Don't see how anyone can eat it. I've been in the US and I was a bit disappointed by those cheese "blocks" (I was disappointed also by huge steaks that almost disappear when you put them inside the pot :)). -- Looking for a new screen-saver? I don't like milk, so I don't knwo the taste of soy milk and I like cheese too much to eat something that is only "like" it :) I tasted a steak made with soy (a vegetarian girl was tasting it :)) but I wasn't impressed by it.. You've to consider also that soy is mostly transgenic today and, if you mind about this (like I do) eating things that could be natural and biologic (like milk or cheese) is better than eathing some soy-based chemicals :) I'm Italian, so I'm a bit sensible about good food :) P.S. what's you favorite cheese? -- Looking for a new screen-saver? Has anyone tried any products such as soy milk or soy cheese? How close are they to the real thing? Even more important, are they edible? I've thought about trying it but am a bit put off... What were your impressions?

My wife is an on-again, off-again vegetarian, so we occasionally get to try out the latest "tofu surprise". Most of the soy products are okay if you use them as an ingredient in another dish. Soy milk is okay, as long as it's cold (don't use it in coffee or tea - blech!). Soy cheese is good, as long as you're not melting it.

I love chocolate soy milk. Tastes great. However, I've tapered off drinking it a bit. There was a study done by the university of Hawaii which indicated that people who consume soy regularly show accerlerated aging of the brain. I don't remember the study now, but you can probably google for it. I'm not a real reverend, I just play one on CP.

I've found that most soy products are pretty disgusting. I don't like soy cheeses, and tofu (derived from soybeans) hotdogs etc. are really gross. I prefer rice milk a lot more, and there's some OK rice milk ice-creams, but they really don't compare to real ice cream (soy ice cream is for the most part disgusting also). However, everybody seems to have different likes/dislikes when it comes to soy products. Also, different brands can have significantly different flavors, textures, and overall quality. Marc

Go to any well stocked Chinese market and you should be able to fine soy replacements for most meat products. There is a soy duck that's quite good, tofu in various hardnesses, Various soy products that look like pasta, etc. Also take a look at any vegitarian cook books they have available. Try miso soup. It's tofu and kelp, and IMO pretty good.
