I'm guessing here - but is it an artefact created by the interaction between the movement of the hose, and the frame rate of the camera? In the same way that a wheel or propeller seems to slowly turn in the wrong direction on TV/Film? What does it look like with the naked eye?

Exactly right. The basic TV frame rates are 24/25Hz (depending on the format), which is the frequency of the sound he is producing. Move slightly off the rate and the shape will appear to progress/retard just like the car wheels. To the naked eye I'd probably be a bit blurred, the motion is faster than persistence of vision(just as the TV camera is). If you could see it, the water would just look like water coming out of a hose you are waving up and down, just speeded up. Nice vid though.

That was my first thought too. But it's a real phenomenon. Low frequencies carry enough energy to move objects. I also wondered if the guy in the video suddenly found himself in need of immediate evacuation to a toilet. As these low frequencies work better than epsom salts.
