              maybe they now freeze the chickens whole (rather then mushing) before cutting them into strips. crispier - must be the bones. don't worry though, chicken (any fowl) bones are fully digested in the human stomach. beaks, feathers and toes though sometimes only partially so avoid the ends and fluffy bits.
