I’m not worried on the deleted files: if we delete one file we want it that way so it should be deleted also in the “backup”.

I have been using Karen Kenworthy's Replicator for years and have found it does what I want: updating or adding changed or new files, deleting files on the target that are no longer on the source, etc. It has a multitude of options that make it very configurable, including scheduling. Peace, Charlie
