My wife is asian (Indian) and I am a total WASP. :) When my son was born, we put on his birth certificate that he was of asian decent. It went by his mom. My son doesn't look Indian, although he has dark brown eyes. In your case, since the child would probably have asian features (specifically, the eyes), I would probably call the child asian even though the mother is caucasian. My four year old has come up with her own unique description when discussing her skin colour.
