Duck or Grouse?

    I have been given a duck, a grouse and a brace of pheasants! Which one for Christmas dinner? What about the Turkey in my freezer? Why so many birds? I may confuse everybody and have a curry! This is actually quite a problem, as I do the cooking, and have no idea what people prefer. I suppose the best thing to do is to cook what I want, and if they don't like it, tough! So, I think DUCK! I can save the pheasants and grouse for a game casserole for new year.

      Served with a thick Marmalade, Cointreau and whisky sauce, roast charlotte potatoes and sugar snap peas. (My mouth is actually watering as I write these words!)

          My favourite at the moment is brussel sprouts, tossed in butter and bacon.

            I won't have them in the house. They are the most obnoxious vegetable ever, and I remember my mother who would boil them harshly for several days until they were ready! Sprouts and cauliflour will be banned when I become Grand Emperor of the Universe! :)

              Nope 3-5 minutes max, add butter and chopped bacon, lurvly! Try 'em you'd be surprised. Cauliflower steamed for 18mins, the a Cheese Béchamel sauce poured over, grilled until golden, (I bet your mouth is watering with anticipation ;) )

                Stuff the grouse in the pheasant in the duck in the turkey and roast the lot. Little bit of something for everybody, and proper Christmas excess...

                    Ok first question which kind of duck? One dish that is quite difficult to prepare but absolutely fantastic to eat involves: A snipe inside a woodcock, inside a teal, inside a pheasant, inside a goose. So you could do a similar thing based on the sizes of your birds, the disadvantage is that for it to work properly you have to bone the birds completely before cooking them (and still maintain the shape). Anyway aside from that, I haven't personally tried it but Grouse is said to be very good, and people in my family love it. So my order:

                    1. Grouse
                    2. Pheasant
                    3. Duck
                    4. Turkey

                    Mind you I think your idea of saving the game for later would be a better bet, we wouldn't because we aren't that fond of turkey. Hmmm, I wonder what we're having actually what with having a pig (entire), 8 woodcock, 10 pigeons, 3 pheasants, 24 duck (muscovy) and 2 squirrels in the freezer...

                      Very nice, have you ever tried cauliflower raw? That's a taste not to be missed :)

                            Grouse... used to have them when in season when growing up in Northern Ontario... miss them...... mmmm... the taste of the pine nuts they ingested infused the meat... mmmmm. Tim

                              just stuff a duck inside the pig, and the squirrel inside the duck. ;P ;P :doh: but I guess it doesn't work as well with avian and mammals mixed... of course you just stuff the two tree rats inside the pig and you have enough room to catch a few real rats to stuff in as well.... X| I know people eat squirrel, but the idea doesn't really appeal to me.... I'll eat rattlesnake long before I eat squirrel.

                                Personally I prefer duck and cant stand turkey.

                                        The PA state game bird is the ruffled grouse. We don't have an official nongame bird.

                                        Otherwise [Microsoft is] toast in the long term no matter how much money they've got.                                           Yeah, squirrel threw me off too. But hey, maybe they taste good. (Unlike rabbit, that was kinda dissapointing)
