    Very nice, have you ever tried cauliflower raw? That's a taste not to be missed :)

      Ok first question which kind of duck? One dish that is quite difficult to prepare but absolutely fantastic to eat involves: A snipe inside a woodcock, inside a teal, inside a pheasant, inside a goose. So you could do a similar thing based on the sizes of your birds, the disadvantage is that for it to work properly you have to bone the birds completely before cooking them (and still maintain the shape). Anyway aside from that, I haven't personally tried it but Grouse is said to be very good, and people in my family love it. So my order:

      1. Grouse
      2. Pheasant
      3. Duck
      4. Turkey

      Mind you I think your idea of saving the game for later would be a better bet, we wouldn't because we aren't that fond of turkey. Hmmm, I wonder what we're having actually what with having a pig (entire), 8 woodcock, 10 pigeons, 3 pheasants, 24 duck (muscovy) and 2 squirrels in the freezer...

        Ok first question which kind of duck?         just stuff a duck inside the pig, and the squirrel inside the duck. ;P ;P :doh: but I guess it doesn't work as well with avian and mammals mixed... of course you just stuff the two tree rats inside the pig and you have enough room to catch a few real rats to stuff in as well....           Grouse... used to have them when in season when growing up in Northern Ontario... miss them...... mmmm... the taste of the pine nuts they ingested infused the meat... mmmmm. Tim

            Personally I prefer duck and cant stand turkey.

            A human being should be able to change a diaper, plan an invasion, butcher a hog, conn a ship, design a building, write a sonnet, balance accounts, build a wall, set a bone, comfort the dying, take orders, give orders, cooperate, act alone, solve equations, analyze a new problem, pitch manure, program a computer, cook a tasty meal, fight efficiently, die gallantly.                     The PA state game bird is the ruffled grouse. We don't have an official nongame bird.

                      Yeah, squirrel threw me off too. But hey, maybe they taste good. (Unlike rabbit, that was kinda dissapointing)

                                :) Fine if it's only for one person. Ducks have about a tenth as much meat on them as you would expect before you start cutting them up. Unless you're dining alone or have 1 duck per person save yourself great embarassment. Turkey sucks. I've tried everything possible to get a decent turkey for over 10 years now and I've just given up. You can deep fry it, you can brine it, you can inject it, you can put butter under the skin and I've tried them all, it still is just plain bad meat to begin with. A half decent roasted chicken trumps turkey every single time no if's and's or but's. Turky is tasteless, dry and stringy and only popular due to marketing. Grouse is very tasty but again not enough for a christmas dinner and note that there is a special place in hell reserved for people who have an opportunity to eat a nice pheasant or grouse and put it in a casserole of all things! Shame on you for even considering it unless you're so used to eating grouse or pheasant that your sick of the same old way of cooking it. If it had to be fowl and I was cooking for a crowd I'd do a nice big fat goose for Christmas dinner.

                                  Mmm...indeed, I love the unique taste of grouse but I doubt it has anything to do with what they eat because I've eaten a lot of them here on Vancouver island and they have that same almost peppery flavour and there isn't a pine nut anywhere around here. I think they just have that taste as a matter of course. I bet they eat more bugs than anything else. The hell with Turkey, people should come to their senses, let them all loose and start raising grouse for commercial sale instead.

                                    I won't have them in the house. They are the most obnoxious vegetable ever, and I remember my mother who would boil them harshly for several days until they were ready! Sprouts and cauliflour will be banned when I become Grand Emperor of the Universe! :)

                                    It's always amazing to me how much truly delicious food in the world people hate because they had it cooked poorly by a parent as a child. And how stubbornly they will cling on to that prejudice as an adult. I once knew a guy who would never eat noodles or pasta of any kind and did not because of bad experience eating it as a kid. I find that amazing, all the world's noodles cut off to him out of prejudice.
