It depends on the song. For things like traditional xmas songs (Silent night, little drummer boy, etc), I prefer ochestral or acapella choir arrangements. For modern songs like white xmas, etc, I prefer the people that did them originally.. There's a group called "The Crossing" my sister found a while back, they do a great rendition of "O Come, O Come Emmanuel" on flute and didgeridoo. Their other tracks tend to have annoying singers or even more annoying spoken pieces (what, you can't sing with feeling so you think talking about it is gonna help?!?), so i can't really recommend them.

For the off-the-beaten-track: The group Rockapella[^] has a couple Christmas albums. They are something of a novelty group, in that all of their music is a capella (although they sound like they've got a drummer and a bassist). You've probably seen the Folger's commercials they've done, and they were the 'house band' for Where In The World Is Carmen Sandiego? on PBS. Handel's Messiah: A Soulful Celebration[^], produced by Quincy Jones, is a really cool restyling of the Messiah. It features artists like Take 6, Aretha Franklin, Stevie Wonder, and so on.

Definitely a second vote for the Trans-Siberian Orchestra. Lately I've been enjoying their second album (The Christmas Attic) even more than the first. They also have a DVD available of their TV special from last year. Contrary to popular belief (and KaZaA), TSO has never collaberated with Metallica.
