I afraid that 'We don't know how much we know' is polite way to tell 'We know that we know nothing'.
I remember reading this when I was a kid. Let me try to take a shot at writing it. Not sure if I remember it correctly. But here goes: He who knows and knows that he knows is a genious, seek him He who knows and knows not he knows is ignorant, guide him He who knows not and knows he knows not is a student, teach him He who knows not and knows not that he knows not is a fool, shun him

You are right if you are programmer :), else: if we do not know how much we know, it is for sure that we know nothing. (Contraposition: If we now something, we know how much we know. :)) Only question is: We know it or not? Does it change that we do not know how much we know? I would say: No. ;)
