Notepad. I write HTML and then pass it through HTML Help.

I don't author my help text, I write it in PSPad (if at all!). :)

Any text editor - we write in DocBook then convert that to HTML, PDF and CHM
Java, Basic, who cares - it's all a bunch of tree-hugging hippy cr*p
